Baked Oatmeal

A delicious, nutritious belly-warmer breakfast that's an easy make-ahead.

Ingredients
  

  • 2 large eggs
  • 2 C milk any works great
  • 1.5 tsp vanilla
  • 3 T butter melted
  • 3 T maple syrup
  • 2 C old-fashioned oats
  • 1.5 tsp cinnamon
  • 1/3 C brown sugar dark is preferred, but light works
  • 3/4 tsp ground nutmeg
  • 1 tsp salt
  • 1/4 C chopped nuts your choice
  • 1/4 C dried cranberries
  • 1/4 C golden raisins "regular" raisins are fine
  • 2 tart apples, peeled and diced Granny Smith holds up great

Instructions
 

  • Preheat oven to 350°. Grease a 9" x 9" baking dish with cooking spray.
  • In a large bowl, mix first 5 ingredients so they're well-combined. Stir in remaining dry ingredients. The mixture will be "soupy". Pour into 9" x 9" greased baking dish, and bake for 50 minutes, or until mixture is set. Serve immediately or store covered in airtight container in the refrigerator. For single serving, microwave 1 minute.
