Baked Oatmeal
A delicious, nutritious belly-warmer breakfast that's an easy make-ahead.

- 2 large eggs
- 2 C milk any works great
- 1.5 tsp vanilla
- 3 T butter melted
- 3 T maple syrup
- 2 C old-fashioned oats
- 1.5 tsp cinnamon
- 1/3 C brown sugar dark is preferred, but light works
- 3/4 tsp ground nutmeg
- 1 tsp salt
- 1/4 C chopped nuts your choice
- 1/4 C dried cranberries
- 1/4 C golden raisins "regular" raisins are fine
- 2 tart apples, peeled and diced Granny Smith holds up great
Preheat oven to 350°. Grease a 9" x 9" baking dish with cooking spray.
In a large bowl, mix first 5 ingredients so they're well-combined. Stir in remaining dry ingredients. The mixture will be "soupy". Pour into 9" x 9" greased baking dish, and bake for 50 minutes, or until mixture is set. Serve immediately or store covered in airtight container in the refrigerator. For single serving, microwave 1 minute.
