Fast Breakfast Rollups

- 6 eggs
- 1/4 C milk
- 1 tsp salt
- 1/2 tsp fresh cracked pepper
- 12 turkey breakfast sausages
- 1/2 C salsa
- 1/2 C shredded cheese use your favorite!
- 6 flour or corn tortillas size medium
In a non-stick skillet, cook sausages according to package directions. Remove sausages to rest on a plate lined with paper towel to capture extra grease. Mix together eggs, milk, salt and pepper. Heat the same skillet to medium heat. Add egg/milk mixture and scramble eggs over medium heat until cooked. Remove from heat.Dampen a paper towel and wrap around tortillas. Heat in microwave on high for 45 seconds to soften the tortillas.
Assemble
Lay 1 tortilla flat. At bottom 1/3 of the tortilla, place approximately 1/8 C of cooked eggs. Top with 2 sausages, 2T of salsa, and 2 T of shredded cheese. Carefully fold bottom of tortilla up over ingredients. Fold in each side, then roll the rest of the way. Wrap tightly in foil. Refrigerate up to 4 days, or freeze immediately. MICROWAVE: To reheat, remove foil. Heat in microwave, on high, approximately 1 minute. If frozen, heat in microwave on high approximately 2 minutes.OVEN: Preheat oven to 325*. Place foil wrapped tortillas in oven 5-10 minutes, or until heated through. If pulling from refrigerator, should be hot in 5-7 minutes. If frozen, should be hot in 10-12 minutes.
