Easy & Inexpensive Black Bean Burgers

Ingredients
  

  • 1 C quinoa cooked according to package instructions
  • 2 cans black beans, drained
  • 1 C frozen or fresh corn
  • 1 C onion small dice
  • 2 T chipotle en adobo minced small
  • 2 cloves garlic minced small
  • 1/2 C cilantro chopped small
  • 2 T tomato paste
  • 1 egg beaten
  • 1 C rolled oats ground to breadcrumb consistency
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 2 T olive oil

Method
 

  1. Preheat oven to 400*. Spray 2 baking sheets with cooking spray, and set aside. Cook quinoa in water, according to package directions. While quinoa is cooking, saute onion and garlic with 2 T of olive oil in a small pan until onion is translucent.
  2. In a large bowl, combine all ingredients. Mix well. Shape into patties and place on baking sheets. Bake for 10 minutes until the top begins to crisp. Flip burgers and cook another 10 minutes.
