I had a bit of giggle fits after landing on a Facebook feed featuring Tweets about “weird” American foods. I really laughed when I read so many questioning the merits of peanut butter…..ARE YOU KIDDING ME?! How dare you question peanut butter! It is the quintessential pantry staple, always ready to do wondrously delicious things.
There is nothing peanut butter I do not like – peanut butter on a spoon, with jelly (raspberry, please), with bananas, with bacon (yup, the salty-sweet gig), peanut sauce, cakes, pies, candy, ice cream….shall I go on? As a little girl, one of my favorite snacks was peanut butter on saltines after school…and as an adult, I’ve matured my palate to peanut butter on Ritz crackers!
After reading that feed, I had a pan of Peanut Butter Pow Bars calling my name….I thought I’d dig out this old favorite that’s super simple and packed with peanut butter flavor. You can never have too much peanut butter in your life, and with these simple pantry-staple ingredients you can whip them up anytime! Is it a bad thing that I ate an entire row….in an afternoon? It was the short end of the pan…just sayin’…
Peanut Butter Pow Bars
Ingredients
- 2 sticks butter or margarine
- 1 C creamy peanut butter
- 3-1/4 C powdered sugar
- 1 sleeve graham crackers crushed
- 1 12 oz bag semi-sweet chocolate chips
Instructions
- In a large sauce pan, melt butter and peanut butter, stirring constantly. When melted, add powdered sugar. Continue to stir to incorporate powdered sugar. Then, stir in crushed graham crackers. Press mixture into bottom of 9”x13” pan.
- In a microwave-safe dish, melt chocolate chips, 30-seconds at a time, until fully melted. Stir between each 30-second increment.
- Spread chocolate evenly over peanut butter mixture. Cut when all ingredients are cooled and set.
