In my journey to eating, and being healthier, I’ve learned that breakfast truly is the most important meal of the day. Key, for me, is to eat high protein early in the day. Not only does it help me feel full longer, but it seems to help me lose weight.
Pure conjecture, nothing scientific with that statement. But, I know one of my key “issues” is that I don’t eat regularly. In fact, I can go an entire day and not eat. Now, I know that’s not healthy, but there it is. Despite my certainly LOOKING like I’ve never missed a meal, the fact of the matter is I don’t eat.
I’ve read so many articles that say when you don’t eat, your body thinks you’re starving it so it holds onto every bit you’ve ingested – good, bad or ugly. In the course of trying many eating plans or lifestyles, I do know that when I eat regularly I do, in fact, lose weight. Weirdly counter-intuitive, but true.
Breakfast Skipper
My biggest issue, frankly, is breakfast. While I’m an early-t0-bed/early-to-rise kind of gal, the last thing I want in the morning is breakfast. I’ve never been a breakfast eater from the time I was young. I’d maybe eat a bowl of cereal before dashing off to school. And, I most definitely got away from breakfast eating decades ago when I was in college and living in a dorm.
Today, it takes extra effort for me to eat breakfast. I don’t necessarily mean time effort; I mean stomach effort. I’m never hungry when I awake, and even the thought of actually eating something right away can literally make me want to throw up. But, in the interest of developing new, healthier habits, I’m focused on finding…and eating…breakfast foods that are high in good proteins, easy to pull together, and will fill me up until lunch.
While I don’t at all make a habit of getting breakfast from a drive-thru, I will say that I DO love McDonald’s breakfast burritos. So, I thought I’d give it a shot myself with fresher, healthier ingredients than what I’d get from a frozen package or drive-thru. The result is stupid simple, like most of my recipes, and delicious to boot. This recipe will make six well-stuffed tortilla roll-ups, which means just one will be sufficient for a good, hearty breakfast. The beauty of this recipe is you literally can stick anything you love into a tortilla. Next up I’m thinking a “Denver omelet” or “caprese omelet” or some olives and feta cheese, a la Greek-ish flavors. I can’t wait for my next batch!
Fast Breakfast Rollups
Ingredients
- 6 eggs
- 1/4 C milk
- 1 tsp salt
- 1/2 tsp fresh cracked pepper
- 12 turkey breakfast sausages
- 1/2 C salsa
- 1/2 C shredded cheese use your favorite!
- 6 flour or corn tortillas size medium
Instructions
- In a non-stick skillet, cook sausages according to package directions. Remove sausages to rest on a plate lined with paper towel to capture extra grease. Mix together eggs, milk, salt and pepper. Heat the same skillet to medium heat. Add egg/milk mixture and scramble eggs over medium heat until cooked. Remove from heat.Dampen a paper towel and wrap around tortillas. Heat in microwave on high for 45 seconds to soften the tortillas.
Assemble
- Lay 1 tortilla flat. At bottom 1/3 of the tortilla, place approximately 1/8 C of cooked eggs. Top with 2 sausages, 2T of salsa, and 2 T of shredded cheese. Carefully fold bottom of tortilla up over ingredients. Fold in each side, then roll the rest of the way. Wrap tightly in foil. Refrigerate up to 4 days, or freeze immediately. MICROWAVE: To reheat, remove foil. Heat in microwave, on high, approximately 1 minute. If frozen, heat in microwave on high approximately 2 minutes.OVEN: Preheat oven to 325*. Place foil wrapped tortillas in oven 5-10 minutes, or until heated through. If pulling from refrigerator, should be hot in 5-7 minutes. If frozen, should be hot in 10-12 minutes.
