Dare I say there’s no such thing as no time for a delicious meal? I’m the first to admit if I’m tired and hungry, I’ll troll the pantry looking for what’s probably not too healthy. But, in my quest for eating healthier at least 80% of the time, I’ve come to love this absolutely delicious, stupid easy meal. It goes like this…
Step 1
Buy whatever frozen vegetables are your favorite. Stock your freezer with a variety of bags to have handy.
Step 2
Heat up a non-stick skillet, along with about 2 teaspoons of olive oil (I love using my flavored oils for this!)
Step 3
Dump in a bag (or a large serving) of frozen vegetables, and saute 3-4 minutes.
Step 4
Crack 2 fresh eggs on top of the vegetables, cover the skillet and let the eggs cook until sunny-side up done. The really delicious part is if you cook the eggs with a soft yolk, the yolk becomes a sauce when you break it. Much healthier than a cream sauce!
Step 5
Slide the whole mess onto a plate, salt and pepper and consume ravenously.
Change It Up!
See…told you it was simple. Now, where I get “fancy” is with add-ins.
- Mexican Blend vegetables, I add a couple good dollups of salsa to the vegetables before adding the eggs. Then, I top with a small sprinkle of cheese, and some chopped cilantro if I have it handy.
- Stir-Fry blend vegetables, I add a little soy sauce and sesame oil to the vegetables.
- Frozen Artichoke Hearts, I use basil-infused olive oil, toss in some minced garlic, a little tomato paste or sauce, then add the eggs.
The combinations are really endless, reliant only on what you have on hand. I suppose this could be made with canned vegetables, but frozen taste so much more like fresh and don’t have added ingredients. Friends, believe me when I say this is a 5-minute meal. It can be cooked in the time it takes to change into your comfy sweats! I hope you enjoy as much as I do!
