Did you ever have one of those days where nothing goes right? You know the kind – you hit the snooze a couple too many times, you rush to work not really knowing if you put deodorant on, your shoes don’t match (yup, done that – stupid black shoes), and you’re greeted with yet another major project with a short deadline. Sometimes you just want to go home and start all over again.
Oh, How I Love Thee
While I wouldn’t say I’m an emotional eater, I do take comfort in certain foods when I’m really at my wits end. My comfort foods are things I’ve eaten for years, so they’re a lot like old friends. Well…not really eaten. More like packed the pie hole until I thought I’d burst….Well…you get the picture. I love Scotcharoos like an old friend….a very, very dear old friend. I’ve eaten them literally since I was just a peanut myself. I love them so much I’m really picky about my Scotcharoos. Not just any old version is good enough for me anymore. Yup…that’s me and Scotcharoos. I cannot lie. I could sit down and eat an entire 9×13 pan and not even break a sweat.
These Damn Braces!
Seriously, I really haven’t done that but I could, that’s how much I love them. My sister makes amazing ones with exactly the right chewy, moist goodness. When I worked in a retirement community, thank the good Lord, my chef brought his own amazing recipe when I hired him. And, the day before I got my braces he brought me a dinner plate full of them for my “last supper”, so to speak. Yup, I’ve now gone an entire year without a single Scotcharoo. Tragic! Believe me, that’s first on my list of things to eat when I get my braces off hopefully late-2019!
Nancy’s Magic
So, I share with you here my sister’s fabulous recipe along with her top tips. First, don’t rush it! You need to melt the peanut butter, sugar and syrup slow and easy so it all comes together smooth….like silk. Be careful not to overcook, and for Pete’s sake, stir it so it doesn’t stick or burn. Don’t just let it sit. And…measure your cereal, don’t eyeball it, so that you have the perfect ratio of dry cereal to ooey-gooey stuff. You should have a bit more ooey-gooey than cereal. That’s how you get a moist and chewy bar.

Nancy’s Scotcharoos
Ingredients
- 1 C sugar
- 1 C light corn syrup
- 1 C creamy peanut butter
- 6 C crispy rice cereal
- 1 C butterscotch chips
- 1 C semi-sweet chocolate chips
Instructions
- Combine sugar & syrup in a large saucepan. Cook over medium-high heat, stirring constantly, until mix begins to boils. Remove from heat and add peanut butter. Mix well. Add cereal, and gently mix until all cereal is coated. Press firmly into 9”x13” pan.
- Melt chips in microwave, in a microwave-safe bowl, 1 minute at a time, stirring after each minute. Chips should be well melted after 1.5 minutes. Just stir well and any remaining chips will melt in. Do not over-microwave! Do not melt over hot water/double boiler. Spread over bars, cool at room temperature until firm, then cut.
